At La Casa de Manolo Franco, we see pairing as an essential part of our cuisine. It is not meant to overshadow the dish, nor simply accompany it. Its purpose is to enhance, balance and enrich every course, always respecting the seasonality and the ingredients that define our menu.
That is the spirit behind our Pairing Nights: a series of evenings where wine takes the place it deserves—not as a companion, but as a protagonist capable of transforming the way we experience a meal.
This summer, the series returns with three exclusive evenings in July, August and September. Three nights to slow down, discover new harmonies and allow every wine to find its perfect dish, and every dish its fullest expression.
Perhaps the finest pairing is not the one that surprises us the most, but the one that feels as though it was always meant to be.
