Since its opening in 2019 — after 50 years as Casa Manolo — this house has kept alive the tradition of mountain cuisine, blending it with the creativity of Manu Franco and his team. This unique fusion has earned them one Sol from the Repsol Guide in 2023, and a Michelin Star from the MICHELIN Guide in 2024.
Manu Franco is the soul of a unique restaurant that bears the name of his father, Manolo Franco. Raised among the fires of the family’s former bar and restaurant, he spent 20 years travelling the world as a journalist before training at Le Cordon Bleu.
Today, he leads a talented team and has created a style of heartfelt cuisine, deeply connected to the aromas of the wild herbs from the Madrid Sierra.
